This is truly the most perfect and easy no bake cheesecake: smooth, light and creamy!

You will need:


For the crust:

2 cups grahams crackers

140 g butter

2 tbsp sugar (any that you have at home) ⠀

For the filling:

250 g cream cheese @phillyaus @lovemyphilly

1 cup sugar

1 tbsp vanilla extract

300 ml heavy whipping cream ⠀

For the topping:

3/4 cup chocolate melts

3/4 cup of heavy whipping cream

Mixes berries (amount needed)⠀


To make the crust:

In a bowl combine graham cracker crumbs, 1 tablespoon sugar and melted butter. Mixture should have the consistency of wet sand.Line a springform pan with parchment paper.Place the mixture into the mold and press down firmly to form the crust. ⠀

Prepare the filling:

With a mixer beat cream cheese and sugar together until light and fluffy, about 3 minutes (if it’s a manual mixer it’s gonna take a few minutes longer) Stir in vanilla extract.In a separate bowl, whisk heavy cream until soft peaks form.Fold whipped cream into cream cheese mixture until fully combined

Place in the refrigerator while getting ready the topping.

Top the cake with a chocolate ganache:

Place the chocolate in a medium heat-proof bowl. Heat the cream in a small saucepan over medium heat until it begins to gently simmer. Pour over chocolate, then let it sit for 2-3 minutes to gently soften the chocolate. Once fully melted pour over the cheesecake and decorate with berries of your choice.

Refrigerate for at least one hour before eating, the longer the better. ⠀
