Creamy avocado spread onto well-toasted bread is one of our favorite quick meals.

Is the two-ingredient breakfast, lunch, and even dinner that’s taken over the world.

The best thing is that there is not just one strict recipe as you can choose your preferred toppings!

The star of this toast is the avocado, so it’s essential you use ripe avocados. ⠀

Our friends from @bybonga inspired us to share you this easy recipe. ⠀

We decided to top our avo toast with a fried egg for extra protein. Swapping the fried egg for a poached, scrambled or hard-boiled egg is also a great idea. ⠀

YOU WILL NEED (for 1 serving):

1 slice of bread, toasted

1/2 ripe medium avocado

Small squeeze fresh lemon juice

1 grilled/fried egg

Sea Salt and pepper to taste

Drizzle extra-virgin olive oil ⠀


In a small bowl, combine avocado, lemon juice, salt, and pepper. Gently mash with the back of a fork.

Top toasted bread with mashed avocado mixture.

Drizzle with olive oil and sprinkle over desired toppings. ⠀


Storing leftover avocado: If you still have it, leave the pit in, and then cover the cut side tightly with plastic wrap. To be extra safe, add a little fresh lemon or lime juice to the flesh before covering with plastic. Keep it in the fridge up to a day (you might get lucky with two days). ⠀
