CHOCOLATE CHIA PUDDING

A winner of a breakfast/dessert recipe that you’ll make again and again.. so simple and amazingly delicious!

It’s the easiest healthy dessert recipe you can make with no baking.

It’s creamy, chocolatey and yet, loaded with nutrients.

BONUS: it’s also vegan and dairy-free!



INGREDIENTS FOR 1 SERVING:


2 tbsp chia seeds1/2 cup almond milk or milk of choice

1 tbsp cacao powder

1 tsp of maple syrup, honey or other sweetener (optional)

Optional: A pinch of sea salt, cinnamon and vanilla extract ⠀


Toppings: granola (recipe #granolabee), raspberries or other fruits of your choice and desiccated coconut flakes ⠀


INSTRUCTIONS:


To a small mixing bowl add cacao powder (sift first to reduce clumps) and rest of ingredients except milk and whisk to combine.

Then add a little milk at a time and whisk until a paste forms. Then add remaining milk and whisk until smooth.

Add chia seeds and whisk once more to combine. Then cover and refrigerate overnight, or at least 3-5 hours (until it's achieved a pudding-like consistency). It may also be helpful to give the mixture an extra whisk/stir once it has been in the refrigerator for 30-45 minutes.

Serve chilled with desired toppings. ⠀
