They’re like a creamy frozen treat that are bright, refreshing, flavorful and so good!

And GUESS WHAT? they require no baking, are vegan, gluten-free, refined sugar-free, and totally delicious! They can also be made with lemon if you don’t have lime. ⠀
INGREDIENTS (FOR 16 BARS)
for the crust:
¾ cup rolled oats
½ cup pecans
1 cup dates (about 10)
1 tablespoon coconut oil ⠀
for the filling:
1 ½ cups raw cashews, soaked for 30 minutes in boiled water
Juice of 3 limes (¼ cup + 2 tablespoons; sub lemons)
Zest of 3 limes (sub lemons)
2 tbsp maple syrup (sub honey or sweetener of choice )
1 tbsp coconut oil
1 tsp vanilla essence ⠀
INSTRUCTIONS:
- Add the oats, pecans, dates and coconut oil into a food processor or high-speed blender. Process until obtaining a sandy, sticky texture. Transfer this into a parchment-lined 8x8 baking pan. Press firmly into the bottom to create a crust.
- Add the soaked cashews, lime juice and zest, syrup, coconut oil and vanilla into a high- speed blender. Blend until smooth and creamy.
- Pour the filling over the crust and freeze for at least 4 - 6 hours, preferably overnight.
- When ready to serve, allow to sit at room temperature for 5 minutes, then slice. Store in the freezer and enjoy! The bars will keep in the freezer for up to a week so they are a great make-ahead dessert
