VEGAN GRANOLA



DRY INGREDIENTS:


2 cups of rolled oats

1 cup of shredded coconut

1/2 cup of sunflower seeds

1/4 cup chia seeds

1/4 cup pepita seeds

a pinch of salt

1/2 cup of macadamias (or any nut of your choice)

1/2 tsp of cinnamon

1/4 tsp ground ginger (optional)

1/4 tsp cardamom (optional)


WET INGREDIENTS:


1 cup dried fruit (raisins, apricots, cranberries, mango)

1 chopped green apple

1/4 cup maple syrup (sub honey)

1 tsp of vanilla essence ⠀


INSTRUCTIONS:


Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit)

Place all dry ingredients in a bowl and stir with a spoon

Blend all wet ingredients until integrated.

Pour the mixture into the bowl and stir with a spoon until all dry ingredients are coated and everything is well mixed.

Place all onto a baking tray lined with baking paper and spread it out gently

Bake for about 20 minutes or until golden stirring halfway though.

Let it cool completely so it cisp up

Enjoy with your favourite yoghurt, milk or smoothie bowl.
